I'm wondering how power over ethernet (POE) actually works. I get it in concept, but for he phones I've chosen, the Polycom Soundpoint series, so I need some type of adapter to connect the ethernet cable to the power outlet on the phone side? I think I do, as stores sell the "regular" version of the phone, as well as one with a PoE cable. I'm trying to find a PoE cable on its own but have so far come up empty handed. Maybe voip-info.org can lend some insight.
Cool, I found the answer I was looking for at Voxilla.com. They do a good job of explaining the Power Over Ethernet : Polycom SoundPoint Power Over Ethernet (802.3af) Cable for the Polycom Soundpoint series, including that the 600 series comes with built in PoE support.
